Veggie Chipotle Chick’n Sandwiches

Sandwiches get a bad reputation - but actually, they can be a perfectly well-balanced and healthy lunch!

As a dietitian, here’s what I’d look for in a well-balanced sandwich: protein, crisp veggies, fibre and a flavourful seasoning.

This veggie chipotle chick’n sandwich ticks all those boxes.

Flavourful, crunchy and satisfying - it’s exactly what you need for a grab-and-go lunch.

Ingredients (Serves 3)

  • 200g cooked plant-based chick’n

  • 150g sweetcorn

  • 2 jarred roasted peppers

  • 15g parsley

  • 40g cheese*

  • 80g unsweetened plain yogurt (I used soya)

  • 30g mayonnaise*

  • 1 tsp chipotle paste (more to taste)

  • Pinch of salt (to taste, if needed - will depend on the brand of chick’n used)

*vegan options also work!

To serve: bread of choice, lettuce, extra spread of yogurt / mayo

Recipe

  1. Cook the plant-based chicken as per packet instructions. Allow to cool completely.

  2. Mix all ingredients together well in a large bowl.

  3. Serve on your choice of bread, with some added lettuce for crunch.

The sandwich filling lasts for up to 3 days in the fridge for a few days of lunches!

You can also eat it with pita, crackers, or an alternative carbohydrate of choice.
